Vitamin D, Bone Health, Cancer and the Importance of Testing

In Vitamin D: Are You Getting Enough? I talked about the role of Vitamin D and why we are finding such an epidemic of deficiency in our modern world.   The widespread use of sunscreen in an attempt to protect you from basal cell carcinoma, one of the easiest to treat cancers, increases  your at risk for more serious disease, like colon, prostate and breast cancer.

Part 1 of a two part video series about Vitamin D discussed the role of vitamin D and why it’s important to test.

Today’s video shares how to interpret the test and bring your blood Vitamin D level up to a range that helps protect you from cancer, osteoporosis, autoimmune disease and a whole lot more.

Simple Strategies for Improving your Vitamin D status

  • Get outdoors and enjoy the sunshine for at least 20 – 30 minutes a day during, preferably when the sun is highest in the sky.
  • Avoid sunscreen for a full 20 – 30 minutes.
  • Expose your arms and legs.  You need to expose 40% of your skin to make sufficient Vitamin D.
  • Be sure to avoid washing the exposed parts with soap for at least 48 hours to give your body a chance to absorb all he Vitamin D it produced as a result of the sunshine exposure.
  • Get tested for vitamin D. The 25, hydroxyl vitamin D test is the one most commonly used.
  • Supplement with Vitamin D if you’re low.

Vitamin D Levels — what’s optimal?

>100 ng/mL Excessive vitamin D
75-100  ng/mL Proposed optimal range
50-75 ng/mL Suboptimal
<50 ng/mL Deficient
<20 ng/mL Seriously deficient

Remember, it’s important to test.

If you decide to skip the test and just supplement with 2000-4000 IU you run the risk of not correcting the problem.  If you supplement with 10,000 – 20,000 without testing, you run the risk of vitamin D excess.

Gluten Free Recipes: Brussels Sprouts – Raw or Roasted They’re Antioxidant Rich

Brussels sprouts are an incredibly nutritious vegetable that offer protection from cardiovascular diseases as well as colon and prostate cancers.  Here are two recipes, very similar.  One is raw, marinated and warmed in the dehydrator.  The other is roasted.

Both are antioxidant rich and delicious.

Roasted Rosemary Brussels Sprouts

  • 2 cups Brussels sprouts
  • 1 teaspoon extra virgin olive oil
  • ¼ cup fresh rosemary, minced
  • 2 cloves garlic or 1 teaspoon garlic powder
  • ½ tsp kelp powder
  • ½ tsp salt

Clean Brussels sprouts and remove any discolored or damaged outer leaves.  Place in bowl with remaining ingredients.  Mix well.  Place on a baking tray and place into oven set to 375 degrees F.  Cook for 20 – 30 minutes, or until soft.

Raw Marinated Rosemary Brussels Sprouts

  • 2 cups Brussels sprouts
  • ½ tsp salt
  • 1 teaspoon extra virgin olive oil
  • ¼ cup fresh  rosemary, minced
  • 2 cloves garlic or 1 teaspoon garlic powder
  • ½ tsp kelp powder
  • 2 carrots, shredded
  • 1 fresh squeezed lemon

Clean Brussels sprouts and remove any discolored or damaged outer leaves.  Cut into thin slices.  Place Brussels sprouts in a bowl and add salt.  Massage Brussels sprouts until they start to soften and wilt.  Add remaining  ingredients and toss until well coated.    Allow to sit and marinate for several hours.  Spread Brussels sprouts on a dehydrator tray lined with a non stick sheet and dehydrate at 140 degrees F for 2 hours.  Reduce temperature to 110 degrees and continue dehydrating until soft.  Serve immediately.

Vitamin D: Are you getting enough?

Nature’s design is to offer us the ability to easily get enough Vitamin D.  We were born with the ability to convert sunlight to vitamin d.  Cool, huh?

The only problem is we’re deficient in sunlight.

Most of us work indoors.  And we’re taught by the “authorities” to be scared of  the sun because it’s dangerous and can cause skin cancer.  It’s said we must slather ourselves in sunscreen or wear protective clothing whenever we go outdoors.

We’ve created a Vitamin D deficient society by virtue of our lifestyles.

By protecting yourself from the sun, you prevent the more benign form of skin cancer, basal cell carcinoma.  You do nothing to prevent the deadly form, malignant melanoma.

And by allowing yourself to become Vitamin D deficient, you put yourself at risk for more serious forms of cancer than you prevent by avoiding sunlight.  Incidences of colon, prostate and breast cancer are significantly higher in the Vitamin D deficient person.

So what exactly is Vitamin D and what does it do?

Vitamin D is actually not actually a vitamin.  It’s a prohormone and it’s responsible for over 2000 genes in the body.  Vitamin D fat-soluble and is naturally present in very few foods.  The main naturally occurring dietary sources are cod liver oil and salmon.  The only significant plant sources of vitamin D are mushrooms, in particular shitakes.  When mushrooms are exposed to UV light, the level of vitamin D increases dramatically.

Some foods are fortified with Vitamin D, such as homogenized milk.  It is also produced endogenously when ultraviolet rays from sunlight strike the skin and trigger vitamin D synthesis. The Vitamin D you get from sun exposure, food, and supplements is biologically inert and needs to be activated in your body.  There are two activations, called hydroxylations required to produce active Vitamin D.   The first occurs in your liver, which converts pro- vitamin D to 25-hydroxyvitamin D [25(OH)D], also known as calcidiol. The second occurs in your kidney and forms  1,25-dihydroxyvitamin D [1,25(OH)2D], also known as calcitriol.

The main role of Vitamin D is to promote calcium absorption in your gut and to maintain the level of calcium in your blood. Without sufficient vitamin D, bones can become thin, brittle, or misshapen. Together with calcium, vitamin D can help protect you from osteoporosis.

Vitamin D has other roles in your body in controlling cell growth, neuromuscular activities, immune function, and reduction of inflammation.  There are many genes controlled by vitamin D, including those that regulate cell growth, differentiation, and death.

Common Conditions and Symptoms Associated with Vitamin D deficiency

Tips to Improve Your Vitamin D Status

The older you get the more unhealthy you are, the harder it is for you to make Vitamin D.  During the winter in all locations north of Atlanta, Georgia, it is virtually impossible to get enough vitamin D, even with mid day sun exposure.  If you are darkly pigmented, you’ll need more sun exposure to make sufficient Vitamin D.

Vitamin D Supplementation

If you’re unable to get your daily dose of sunshine, then take a vitamin D supplement. Vitamin D3 is best absorbed and utilized.  It’s usually from lanolin, which is from sheep.  If you prefer a vegan source, the only one I know about is Vitamin Code Raw Vitamin D3.  Vitamin D2, a less well absorbed form of vitamin D, is another vegan option.

In general, Vitamin D supplementation is much less effective than sun exposure.  It’s best to get sunlight exposure as much as possible and only use the supplements when sunlight exposure is not possible.  However, it’s best to test to determine whether you’re getting enough.  So many factors affect how well you derive Vitamin D from sunlight.  Most people just don’t get enough.  Even if you get plenty of sun exposure, it’s possible to become Vitamin D deficient.

You can overdose on Vitamin D.  That’s why I recommend a baseline test before starting supplementation.  You cannot overdose on Vitamin D via sunlight exposure, but you can with supplementation.

According to Dr. Mercola, you may need 3000 units of vitamin D per 100 lbs of body weight to correct a deficiency.  In the case of cancer or severe auto immune disease, optimal may be in the range of 5000 units per 100 lbs of body weight.  The human body, given the right conditions, can make up to up to 20,000 units in a day!

Vitamin D supplementation can be helpful for combating acute infectious disease, like the flu or a cold.  In this case, you should take 2000 units /kg per of body weight each day for 3 days.

Vitamin D has a long half life, which means that you can take it once a week rather than daily.

Vitamin D Testing

Testing for Vitamin D is very important to make sure you optimize your levels and avoid overdose.  You should test 25-Hydroxy vitamin D not the more expensive 1,25 dihydroxy vitamin d.

I have found in my practice that it’s SO important to get vitamin D tested …not just once but every 3 months until your levels are in the optimal range (I target for 75 in general, but since there are so many factors involved, I tailor my recommendation to the person).

Vitamin D Levels — what’s optimal?

For anyone with levels below 20 I generally recommend 10,000 and sometimes more for 3 months then recommend retesting.

In many cases the levels come up to the 30s by then and I recommend the same for another 3 months.  If the levels come up higher than 30′s, I’d probably drop that down a bit and retest in 3 months.  If lower, I would increase the dose and monitor again soon.

The key is testing.  If someone is really low and has serious conditions, like autoimmunity, I often recommend higher doses and retesting sooner.

Halloween – The True Cost and Ways to Make it Healthy and Fun

The ghosts and goblins will be walking the streets today, carrying their special Halloween treat bags.  What they carry in those bags is far more scary than they, for it has the potential to rob them of their most precious gift…their health.

Americans spend close to two billion dollars every year on Halloween candy!   That’s $2,000,000,000!!!  That’s how much it would cost to send 20,000 students to a decent college for 4 years, or to feed 303,030 kids in Ghana, Africa for a year.  How many hurricane or earthquake victims can be assisted with $2 billion?   What about the hidden costs of Halloween?  The dentist bills, doctor bills, lost productivity and distress that ensues as a result of gorging on candy every October 31st  add up to millions.

The cost of Halloween on our health and the health of our kids is staggering. Since 1980, obesity rates in children have tripled. Today, 13 million children are obese .  The amount of sugar consumed at halloween and throughout the year contributes not only to obesity but to serious debilitating disease, like heart disease, cancer and diabetes. Annual obesity-related medical costs are estimated to be $168 billion.

The ingredients in typical Halloween confections are scarier that the costumes.  In addition to sugar and health damaging oils, they are filled with artificial colors and preservatives.  And, according to Pure Fun Candy,  producers of an organic line of cane juice sweetened candy colored with vegetable and fruit extracts, the FDA doesn’t monitor artificial colors, flavors and preservatives or even require that they be tested. Yet  research published in the Lancet, one of the most respected medical journals,  concludes that food additives affect  brain chemistry in children, resulting in hyperactivity and ADHD like behavior. Lancet 2007, Nov 3:370(9598)1560-7 “Food Additives & Hyperactive Behavior in 3 Year Old and 8/9 Year Old Children in the Community: a Randomized, Double-Blinded, Placebo Controlled Trial.” McCann D, Barrett A, Cooper A, Crumpler D, Dalen L, Grimshaw K, Kitchin E, Lok K, Porteous L, Prince E, Sonuga-Barke E, Warner JO, Stevenson J. School of Psychology, Dept. of Child Health, University of Southampton, UK.  300 Children Studied.

This research prompted Wal-Mart in the UK to ban these additives in children’s foods. Yet American kids continue to consume them in record amounts, especially at Halloween.

So what’s your plan for keeping yourself and your family safe this Halloween?  Here are some suggestions, taken in part from Healthy Halloween Treats

1- Pull your spending power away from the $2 billion spent on candy.  Hand out trinkets like pencils and pads, party favor toys, boxes of raisins or quarters.  If you feel you MUST give candy, try some of the  Pure Fun Candy organic products.  There’s a 3 page list of healthy alternatives in the book  Healthy Halloween Treats.

Cancer and Children, the SAD Connection: Are Raw and Living Foods Part of the Solution?

It’s always sad to hear about a child who’s suffering and dying from cancer.  It’s heartbreaking, actually.  Such a waste of a life, to be stricken down so young.  And what a painful experience for a parent…to lose a child is the worst nightmare of every parent.

Yet it happens every day, and it is frustrating to no end to observe the scenario.  As you may recall, I lost my sister to cancer just over a year ago, and I watched in horror as they tore her immune system to shreds with the drugs, foods and treatments, in the hope that they could kill the cancer.  She, like most cancer patients, died from the treatment, not the disease.

How can you expect a body to heal from cancer when it’s fed hospital food…white bread, milk, sugar, canned vegetables and bottled fruit juice.  None of the food has life, and as such it has no ability to create life, or save life.  It has only the power to destroy life.

This post was prompted by the story of a young boy named Dominic.  I met his mom, Elaina Love, for the first time earlier this year, and again just a few weeks ago when she came to Austin to teach a class on how to make holiday meals that are life giving, in place of  the holiday typical menu, containing foods that are life depleting.

I cried as I read this story and I’m tearing up again as I recount it.  I have a son who’s around the same age, and the thought of losing him is unbearable.   As I read Dominic and Elaina’s story, I couldn’t help but put myself into her shoes, and feel the intensity of the pain she is experiencing.

Dominic, age 14,  became ill with leukemia earlier this year, and much to Elaina’s anguish, Dominic and his dad decided to put their trust in mainstream medicine — chemotherapy, radiation and a bone marrow transplant.  All the while, he continued to eat the food served in the hospital,and the foods he and his dad chose, rather than follow Elaina’s recommendations of green foods, wheat grass juice and no sugar.

They thought it was successful until November 25, 2009 when the doctors  told them the leukemia was back and more aggressive than ever.  There was nothing more that mainstream medicine could offer Dominic, except to keep him comfortable as they waited for him to die.  Their estimate was that he had between 1 week and 1 month to remain on the planet.

Finally, Dominic and his dad agreed to follow Elaina’s advice and take him to the  Hippocrates Health Institute in Florida,  where they are famous for helping people to heal from cancer and where people go when they have no other choice.  There Dominic will eat a completely green raw diet consisting of juices and greens, get daily wheatgrass implants , oxygen therapy and other non conventional therapies that the institute has to offer.  It is their last hope.

Before leaving for Hippocrates, Elaina took Dominic off everything that feeds cancer-    sugar, fruit,bread, dairy, pastries, salt, caffeine, meat,and everything that is served on he hospital cafeteria trays sent to his room three times a day.   He started consuming liquid blue green algae, wheat grass , green juice ,  cucumbers, avocado, lettuce, red bell peppers and only raw, vegan foods that contain no sugar.  They stopped the IV, which contained sugar water.

Elaina and Dominic have been at Hippocrates for about 10 days now, and Elaina reports that he seems to be getting stronger.  Only time will tell.  You can follow Dominic’s progress on Elaina’s blog, at http://elainalove.wordpress.com/

Let this story serve as a wake up call.  Your children, our children, the children of the planet, NEED to be fed whole fresh foods, not the packaged, refined, cancer-causing fare served in schools, restaurants and most people’s homes.

We need to wake up, as a culture, to the fact that nature has its “laws“.  Just as you can’t defy gravity, you can’t defy your body’s nutritional needs, feed yourself and your family toxic foods,and expect to be healthy.

Over 40% of the US population will get cancer. A large percentage of those WILL die from it.  And these numbers are going up.  The only way to put yourself and your loved ones on the “safe” side of the fence is to throw all the cancer causing foods and chemicals over the fence, and as far away from you as possible.

It’s painful to lose someone you love.  It’s even more painful when you lose them to a preventable illness, as I lost my parents then my younger sister.  Make a commitment today to, as Gandhi said, to  ” be the change you want to see in the world”.  Create vibrant health for you AND your loved ones, one bite at a time.  Whatever the temporary pleasure attained from eating SAD food, it’s tainted by the long term suffering of cancer.

Get support if you need it.  Surround yourself by like minded people who care about their health.  Get a mentor and make a commitment to your health, your family’s health and the health of the planet.  Dare to make unpopular decisions, and you’ll live to tell about it.
