Quick and Easy Heathy Meals: Raw and Living Foods, Gluten Free Daiy Free Power Breakfast Ideas

One of the bigget myths I encounter related to eating healthfully is that it takes a lot of time.  In reality, it’s actually pretty quick to put together a satisfying and delicious meal made of fresh, whole living food .  You can do it in a matter of minutes.

Apple Ginger Medley from Dr. Ritamarie’s Power Breakfast Ideas Book

Here’s the recipe

Apple Ginger Breakfast Medley

This recipe is very satiating. I feel full for many hours after eating it.

Ingredients

  • 1 – 2 apples, finely diced
  • ¼ cup almonds, soaked and chopped
  • ¼ inch piece of ginger, minced
  • ¼ cup lemon juice
  • ¼ teaspoon cinnamon

Toppings: (Your choice) cacao nibs, goji berries, coconut flakes, raisins, hemp seeds, etc.

Optional Sauce:

  • 1 tablespoon coconut cream
  • ½ tablespoon flax oil
  • 1-2 pitted medjool dates, soaked for a few minutes in 1/4 cup water to soften
  • 1 teaspoon raw cacao powder (optional – for chocolate sauce)

Directions:

  • Make the topping by blending coconut cream concentrate, flax oil, dates and chocolate (if desired) until smooth and creamy. Add a small amount of date soaking water if needed to make it pourable.
  • Place all ingredients in a bowl and stir to combine.

Preparation tips

Apples, ginger and almonds can be chopped in a food processor or using a food chopper tool. I use one from Pampered Chef.

A Living Foods Feasting Weekend

This weekend has seemed like an eating and socialization orgy.  What a nice break !  Friday night was date night with my husband, Scott.  It was supposed to be an evening out with out of town friends, Tonya and Cody of http://www.JourneyofHealth.net, but they were delayed in their travel plans, so Scott and I took the opportunity to have an evening out anyway.

We went for dinner at Daily Juice Cafe and had a delicious meal.  Scott had Caesar salad and a coconut barbecue wrap and I had an enchilada and a not egg salad wrap.  We each had a green smoothie, too.  The food was delicious.Not Egg Salad Daily Juice Cafe

When Tonya and Cody arrived on Saturday afternoon, I  took them to Borboletas Living Gourmet for lunch. The food was delicious and they were thoroughly impressed, since they have no living foods restaurants in Calgary. Tonya and Cody’s 8 month old Daughter Abby enjoyed the food as much as we did, and Grandma Jean was excited that Borboleta’s served coffee and chocolate pie.

Since Tonya was on day 62 of a 92 day juice cleanse, we went to Daily Juice Barton Springs afterwards for a green juice then we went to check out a new store called Natural Grocers. There we stocked up on produce at amazing prices.  What an exciting find.

We topped off the day with a living and raw foods potluck at my home.  We had a huge turnout…in the neighborhood of 70 people.  It’s exciting that so many people are discovering Living Foods and desiring to learn more.

The weekend was topped off with another trip to Daily Juice Cafe with Tonya and Cody, where we met our friends the Osborne’s.  Mom Karen and daughter Lauren were celebrating their birthdays and we had another amazing meal.

8- Fresh Choice Huge salad bar with lots of raw vegetables.  Also serves meat and standard American fare.

I’m teaming up with Chef Alicia Ojeda to teach an all day class on greens.  We’ll not only share, demonstrate and allow you to taste delicious foods and feel the energy jolting effects of eating this way, we’ll also share our expertise in the area of green nutrition.  We’ll empower you to choose green foods at every meal and LOVE it.

The Live class will be held in Austin Texas AND we’ll be live broadcasting it across the Internet.  Our new technology will make this our best web class yet.

If you can’t make the live class or even the live broadcast because of schedule conflicts, you’ll be able to get access to the recordings in an easy to use format.

Here are the details:

  • The live class will be held in Austin, Texas on Sunday June 14 from 12:30 until 6:30 PM
  • The class will be broadcast, in streaming video quality, live as it happens.  This means that you can ask questions and interact with us via an instant messenger type panel.
  • The webcast will be recorded and be available by the day after the class, as a recorded streaming video.  You will be provided with instructions for accessing the recording, so if you miss the class or parts of it, you can watch it right away.  You can also watch it in segments.  In fact we recommend watching in segments and making the recipes right after you watch them.
  • In addition we will be videotaping the class and the digital, unedited recordings will be made available shortly afterwards at no additional charge to both live attendees AND web participants.

You can’t go wrong. You can attend, taste, enjoy, participate in the hands on sprouting segment AND have recordings to refer back to over and over.

So — bottom line.  Even if you can’t make the class times and dates, you can get access to the recording right away if you sign up for the web class.
