My 4th Favorite “F-Word” – and a Dairy/Casein-Free Parmesan Cheese Recipe!

Hello, Health-Seeker! Greetings from my beach condo in Florida! How lovely it would be to escape like this more often. While I still have work to do, and this is not a “full time ” vacation, it sure does feel good to be able to slip away and get some beach time. 19 years ago today, I was blissfully gazing into the eyes of my now full-grown-man son! I remember it well. Seeing him again, after 7 weeks of not seeing him, brought back a flood of memories. We waited a long time for his arrival, and the joy of seeing him again was almost as intense as the joy of seeing him for the first time. Eric is in classes much of the day, but we did get to spend some time yesterday doing one of his favorite activities – eating! He was delighted to get “real food”. I carried vegan tacos from one of his favorite Austin restaurants all the way to Florida with me…his request for his birthday present. Then we went to another of his favorites for dinner – Chipoltes. We are planning to go to an Ethiopian place for dinner for his birthday celebration. We […]

Dreams DO Come True – Fight Chronic Fatigue and SHINE!

Hello, Health-Seeker! I’m back home from Florida where I enjoyed the beach sooooo much! One of my dreams is to take a couple of months and rent a beach house and hang out – vacation, work, and enjoy my favorite activity in the world…being in the ocean. Do you have a dream? I intend to make mine come true. While away, I got to thinking about how I can empower you even more to take the steps you need to take, in order to step into your dream. Last year, Jan, who I got to know as a member of my B4 Be Gone community, and now is a key team member, had a dream related to having the body of a teenager and the ability to do some amazing things on the trapeze. A year later, she has accomplished the trapeze magic, and recently demonstrated that she does indeed now have the body of a teenager. Her daughter, 26, convinced her to go along with her for a “fitness competition” and enter in the “over 50” category. Jan, 53, agreed to go with her daughter, and to her surprise, she was the only entrant over 50, so she competed […]

Why 95% of Raw Fooders Fail – and a Raw Crunchy Granola Recipe!

Hello, Health-Seeker! On my run yesterday, I sneaked into the woods and made it to a beautiful stream and waterfall. I didn’t have time to do the entire trail, since it was already evening, but I did go far enough to be mesmerized by the water falling into the pool below. Granted, it’s a tiny waterfall and the stream is not very much more than a trickle, but it’s nature at her best, nonetheless. I stayed there for a few minutes before turning around to go back home, and I was filled with joy and gratitude. To have such a beautiful place within a 20-minute run from home, and to be fit enough to go there and back whenever I choose, filled me with immeasurable joy.  I found myself thinking, “I love my life!” Like you, not all the moments in my life are so glowing and beautiful. I experience the frustrations of living with a teenage boy, deadlines that need to be met, and lots of responsibility. I feel so fortunate to be at a place in my life where I can truly count my blessings, like the waterfall, and to be able to accept the less than fun […]
