Recipe: Cauliflower Mashed Potatoes with Mushroom Gravy

balance blood sugarThis is a great alternative to traditional potatoes. Potatoes are high glycemic and not appropriate for those with blood sugar imbalances. Cauliflower is loaded with nutrients and antioxidants and is a good source of cancer-fighting sulforaphane.  I made this last year for Thanksgiving, and no one could tell which were mine and which were the “real” thing.

Cauliflower Mashed Potatoes

Ingredients:

  • 1-2 heads of cauliflower
  • 1/2 – 1 teaspoon flax or coconut oil
  • salt to taste

Directions:

  1. Steam cauliflower until tender.
  2. Blend until smooth – possibly in small batches depending on size of blender.
  3. Place in serving bowl and add coconut and or flax oil and salt to taste.

Optional extras: garlic, chives, black pepper, or other herbs. Use whatever flavors you typically use on mashed potatoes.

Top with mushroom gravy or eat as is.
