Wow, %$firstname$%!  What a month it's been.  I've been planning new events, analyzing lots of lab work, preparing for the end of the school year and writing.  I'm working on a new book that's like nothing else on the market.  Goal to completion is early July!  I've also been waiting patiently for the videographer, graphics designer and my co-author to finish up their parts on a brand new, long overdue book and home study course on using your food dehydrator to make mouth watering comfort foods.  It's a phenomenal product and should be completed soon.

The theme of this issue of “Creating Vibrant Health” is Cancer – diet and lifestyle approaches to taming this dreaded disease.  According to World Helath Organization , “Prevention offers the most cost-effective long-term strategy for the control of cancer.”  This month's newsletter includesseveral informative articles and a couple of delicious cancer-protective recipes for your enjoyment. Keep yourself safe and share this vital information with your loved ones.

On
June 2 we’re hosting Brian Clement, director of the Hippocrates Health Institute in Florida, to talk about preventing and managing cancer with diet and natural therapies.  The Hippocrates institute has worked with many thousands of cancer patients and helped them to create an environment in their bodies that's no longer hospitable to the
cancer. 

You may recall me mentioning that my sister Cathy died of cancer just 2 years ago.  It was heart-wrenching to watch her die, and there was nothing that medicine could do for her.    Had she heard Dr. Clement speak and followed his advice, she'd probably still be with us today. One of the approaches to remaining cancer free is to drop worry and have fun.  I've been doing a lot of that lately.  My son Kevin is on a baseball team, and I’ve been enjoying cheering him on.   For the first time ever, I ‘m having lots of fun watching his baseball games.   I used to go out of obligation and didn't really enjoy them.  Yet something clicked this spring and I've attended most of his games and loved being his fan club. 

I'm pretty excited about our up and coming events.  The details are below on the calendar.  I'll give you a sneak preview.

Yet I recently found a book called “Cancer…Its Causes, Symptoms and Treatment”, by Eli G. Jones, MD.  It was recommended by my herbal medicine mentor David Winston.  It sat on my shelf for almost 2 years and I just happened to come upon it during my recent reorganization frenzy.  What I read blew me away.

 Dr. Ruth Heidrich's Amazing Recovery from Breast Cancer

In 1982, at the age of 47, Ruth Heidrich got the shock of her life.  She was diagnosed with breast cancer.  At the time, she considered herself healthy and fit.  After all, she ran marathons and ate what was considered a healthy diet.   After a modified radical mastectomy to remove the tumor, she was told by not 1 but 5 different doctors that her tumor was life threatening and there was nothing they knew how to do to strengthen her immune system to overcome the cancer. 

As she would later discover, the cancer had already  spread to her bones and one lung.

Fortunately for Dr. Heidrich, she was an avid reader and researcher, and found that Dr. John McDougall was doing a study on the effects of diet on breast cancer.  She paid him a visit, and was told “, If you want to save your life, change your diet.”  On the spot, she decided she'd rather change her diet than undergo chemotherapy and radiation,  joined Dr. McDougall’s study and adopted a  low-fat vegan diet.

Broccoli Sprouts:  Amazing Little Cancer Fighters

 One of the
many
benefits of a diet rich in fruits and vegetables is the reduced risk of cancer. Hundreds of studies are being conducted to determine exactly which components in our food are anti-carcinogenic and one of them – broccoli sprouts — is getting a lot of research attention for its phytochemical, SULFORAPHANE.  

In general, cruciferous plants are rich in sulforaphane in its glucosinolate precursor form, glucoraphanin (conversion occurs in the gut).  Broccoli contains unusually high levels of glucoraphanin, with the youngest plants having the most concentration.   Raw is preferred, as heat appears to destroy some of the glucoraphanin.  However, the evidence suggests that broccoli must be eaten in large quantities to substantially reduce the risk of cancer.  Broccoli sprouts, then, become the optimal food for the following reasons:

  Immunity  Building Cole Slaw

Equipment Needed: Food Processor and Blender

Ingredients 

 

Dressing

     

  • 1/3 cup hemp seeds
  • 1/4 cup chia seeds1
  • 1/4 cup flax seeds
  • 1/4 cup walnuts
  • 1/4 cup macadamia nuts
  • 2 Brazil nuts
  • 1 clove garlic
  • 2 lemons, juiced
  • 1 teaspoon turmeric
  • 1 teaspoon kelp powder
  • 1 cup red or concord grapes with seeds
  • 1 inch chunk of ginger
  • 1 teaspoon whole unrefined salt
  • 2 cups water

 

Salad

     

  • 1 head of cabbage
  • 3-4 broccoli stems
  • 1 package broccoli sprouts
  • 3 carrots
  • 1 beet (optional)
  • 1-2 large apples(optional)
  • 1 cup pomegranate seeds (optional)
  • 1 cup raspberries(optional)

Directions

 

  1. Blend all sauce ingredients until creamy. 
  2. Using shredder blade in food processor, process cabbage, broccoli stems, carrots and optional beet and apples
  3. Toss dressing with vegetables and mix well. 
  4. Top with optional extra ingredients. 
  5. Serve cold.
