It's tough enough being a carb addict, especially if you're on a Gluten Free Diet. Visions of bread, crackers and pasta fill your mind and tempt you to indulge in foods you know are not nourishing you. If you're a carb addict on a Gluten Free Diet, it is even worse. Many of the gluten free recipes for breads and crackers are tasteless and unsatisfying.
Eating all those carbs can lead to many health problems, not the least of which are an expanded waistline (if not frank obesity), diabetes, heart disease, depression, focusing difficulties, dermatitis, irritable bowel, fatigue and so much more.
There are many good books on the subject. Dangerous Grains, by James Braley, M.D., The Gluten Connection by Shari Lieberman and Going Against the Grain by Melissa Smith are good food for thought.
Learning to create crunchy crackers and delicious breads using a food dehydrator is a skill worth learning, especially if you're a gluten-free carb addict, like I used to be.
There are lots of recipes on the Internet and in the dozens of raw and living foods recipe books that fill the bookstore shelves, yet there's no comprehensive book on the art of dehydration. I'm working on one and hope to release it later this spring.
