It’s an exciting week here at Dr. Ritamarie Central. I’m busy creating content for several webinars this week.

This past Saturday, I taught an all day webinar to my Energy Recharge System Practitioner Coaching group. The topics were Immune System and Detoxification. We sure did go into depth, and everyone left empowered and “full”.

This Wednesday, I’m holding a practitioner training on Allergies, aB4 Be Gone Blood Sugar Balancing Class Reunion, and aVITAL Community Q&A Call – all on the same day!

And Thursday evening is the grand finale webinar for SHINE, my most recent webinar series about Secrets to happy Hormones, Invigorating Nutrition and endless Energy.

How Happy are Your Hormones?

As part of my SHINE webinar series, I talk about the intimate connection between your everyday hormones (insulin, thyroid, and adrenal) and your “fun” hormones (estrogen, testosterone, and progesterone).

We discussed how too much stress uses up the building blocks of your sex hormones in order to make cortisol, and your sex hormones suffer. So does DHEA, and your skin sags, and your hair falls out!

Yikes. That’s no fun.

While we all run around looking for the fountain of youth, we often fail to look in our own back yards.

Managing stress and filling yourself with delicious nutrient dense whole foods can go a long way towards improving your longevity.

Restoring Balance to the Gut for Optimal health

As holistic health practitioners, our goal is to educate our patients and clients to take care of themselves before disease sets in, not after.

As you probably already know, the gut plays a key role optimizing health, and one of the most important considerations is the quality of gut flora.

ts disrupted by steroids, birth control pills, and antibiotics — both ingested and in animal foods. The good bugs in the gut are important for synthesizing vitamins, providing protection from disease, and optimizing digestion.

When normal flora becomes disrupted, it sets the stage for the overgrowth of yeasts, fungii, bacteria, and viruses that can create digestive havoc and lead to nutrient deficiencies and serious disease. Studies increasingly suggest that each person's unique gut flora composition, balance, and activity influence immune function and overall health.

From time to time, I am invited to free webinars that explore topics of importance in functional medicine and lab assessment.

Quick and Easy Low-Glycemic, Gluten-Free and Dairy-Free Lemon Cheese Cake with Chocolate Sauce

Sometimes when you're in a hurry, you may be tempted to reach for something quick and easy — and not so good for your body.

I made this recipe after dinner on Mother's Day. My husband had made me a delicious meal, and I coyly asked, “What's for dessert?” Flustered, he stammered, “It took me a long time to make dinner; I didn't have time to make dessert.”

So I went into the kitchen and used the cashew/macadamia nut cheese he'd made for the lasagana, and I added coconut butter, lemon, lemon oil, almond extract, and erythritol (Zero). I would have done half stevia, half Zero, but he doesn't like stevia. I put everything into a spring form pan and set it in the freezer for an hour or so. Had I wanted to spend more time, I could have made a crust. But we didn't need it. The result was a delicious guilt-free dessert that didn't spike anyone's blood sugar!

Lemon “Cheese” Cake:


  • 1/2 cup raw cashews
  • 1/2 cup raw macadamia nuts
  • 1/2 cup water
  • 1/4 cup coconut butter
  • 3 lemons, juice of
  • 3 drops lemon oil
  • 2 tablespoons erythritol (Zero), Lakanto, or xylitol
  • 1/4 teaspoon almond extract (optional)
  • 1 pinch salt


  1. Blend and place in spring form pan or a glass container.

Chocolate Sauce:


  • 1 cup macadamias nuts
  • 2 tablespoons cacao powder
  • 1 tablespoon Maca (optional)
  • 1 teaspoon erythritol (Zero), Lakanto, or xylitol
  • 3 drops chocolate stevia


  1. Run through BlendTec nut butter attachment (or food processor) until creamy.
  2. Set cheesecake in refrigerator or freezer for a couple of hours to set.
  3. Top with chocolate sauce and enjoy!
