Being prepared reduces temptation!

Staying healthy while on the road does not have to be complicated

or stressful, but it does require some preparation. 


Make sure you bring some of these items with you and you will always be ready to have something super healthy: green or protein powders, chia seeds, a jar (preferable mason) to mix your drinks in, and small packages of nuts and seeds to sprinkle on salads. 


So while your family or travel companions reach for the coffee or doughnuts at the gas station or at the airport , you will be able to have a quick, satisfying snack and experience vibrant energy and total clarity. A total opposite of what you would feel like if you have given in to sugar and caffeine.

 A Busy Week of Health Inspiration!


Hi Health-Seeker, 


It's been quite a month and it feels so good to be back home and in my own space. 


After getting freed from my bionic arm brace last week, I've added a few firsts: first run in almost 6 weeks, first weight lifting session using my left arm in almost 10 weeks and first candy bar blood sugar spike in a long time (read about it in feature article).


There's a lot going on here and it's very exciting.


If you're a health practitioner or strive to be a health or nutrition coach, I am having a live event just for you January 10-12, 2014 here in Austin, Texas. We'll be sending out details as soon as we get the confirmation from the hotel. The name of the event is S.H.I.N.E. – Scientific and Holistic Investigation of Nutritional Endocrinology.  It's a mouthful, and will focus on strategies for solving your client's (or your own)  hormone imbalances using functional medicine and whole foods nutrition.  I am very excited.


I'm also excited about the GMO summit that starts this Friday.  If you haven't registered yet, please do so right away here.The safety of our food is at risk and you owe it to yourself to get all the info you need to protect yourself.

 I Ate a Candy Bar the Other Day!

My blood sugar shot up to 155!


Healthy fasting blood sugar is around 80.


Diabetes is diagnosed when fasting blood sugar goes to 120 or above and is 140 or above after eating.

And it stayed that way for several hours…


It was still higher than usual by the next morning —it was 106, which is considered insulin resistance territory.


With my family history of diabetes, insulin resistance, heart disease and cancer, what I did was downright dangerous.


By now you must be thinking “why the bleep did she eat a candy bar then? “ Well, the candy bar eating was actually not really related to food after all….

Interpretation of Hemoglobin A1C 
A Marker for Blood Glucose Control

Hemoglobin A1c (HbA1c)  measures the percentage of red blood cells (RBCs) that are saturated with glucose.  Saturation of RBCs occurs when blood glucose is elevated.  The higher the HbA1c, the higher the estimated average blood glucose.  HbA1c is generally considered to be correlated with the average blood glucose over 2-3 months.

The higher the average blood glucose, the more damage that's done to delicate blood vessel linings, retinal tissue and microvasculature of the extremities and retina.  Damage to these are contributors to all the complications that diabetics face.


Out of control diabetes usually correlates with HbA1c of above 7, which correlates with an average blood glucose of 154 or more.  I've had patients with levels of 10 or more, suggesting that their average blood glucose is 240 or higher.  Doctors consider their diabetic patients to be well controlled when their HbA1c is is between 6 and 7.  (126-154)  Yet study after study demonstrates serious damage to vasculature, retina, pancreas and nerves when blood sugar exceeds 120.  Some studies report damage when glucose rises above 100!


So what's an ideal HbA1C?  Most functional medicine practitioners aim for between 4.5 and 5 (average glucose between 82 and 97). 


If you're working with clients and you would like them to have the advantage of balanced blood sugar, get their HbA1C tested.  They can order through Direct Labs.

  Stuffed Bell Peppers


I came up with this recipe while on the road – the result is a great travel food with easy to find ingredients that requires minimal kitchen tools to assemble. Enjoy!


Here's how you can assemble a healthy and filling meal on the run:

  1. Buy a red bell pepper at a grocery store or health food supermarket
  2. Buy some pre-made guacamole and a jar of sauerkraut

  3. Cut the bell pepper open (using a plastic knife from the store or rip it open with bare hands!!)

  4. Spoon guacamole into each half

  5. Spoon on some sauerkraut

Eat like a taco!

Extra options for toppings — salsa, nut “cheese”, chopped nuts or seeds.
