Raw foods potluck tonight and Apple Pie Recipe: talk covered gluten free and fighting fatigue

Getting together with people who are motivated to take charge of their health is one of my favorite things to do. We had a wonderful get together tonight. Lots of new people joined us tonight. The food was inventive and delicious…dolmas, collard roll-ups, nori rolls, raw “pita” pockets, chocolate pudding, coleslaw, apple pie, kale chips, crackers, tropical fruit salad, fresh sprouts, fresh fruit, pumpkin pie soup, greens, brazil nut pate, pesto, and lots more.

After dinner, I did an impromptu talk. I told my health story, and talked about topics such as gluten free, thyroid, arthritis, fatigue and lots of miscellaneous stuff. I love sharing my experience and knowledge and empowering others to vibrant health.

I talked a little about my new women's fatigue coaching program, starting in mid February. I haven't even announced it and several slots are already filled. If you are not able to fully enjoy your life and do all the things you'd like to because you're just too tired, send me an email at

Here's the apple pie I made tonight

Crust:

1 cup pecans
1 cup soaked and rinsed almons
1/2 cup dates

Process in food processor til it forms a ball. Press into a pie pan.

Filling:

5 apples
2 lemons, juiced
1 teaspoon cinnamon
1/8 teaspoon cardamom
1/2 cup almond butter
1/2 cup dates, pitted
1/4 cup water, or more if needed
1/4 cup groud chia seeds

  • Blend almond butter, juice of 1 lemon, water, cinnamon and cardamon until smooth. Add water if needed.
  • Core and shred apples. Sprinkle with juice of 1 lemon.
  • Put apples in a bowl and cover with almond butter mixture.
  • Add chia seeds and stir until well combined.
  • Pour into pie crust.
  • Decorate the top with berries and cinnamon.
