Are You Drinking Plenty of Purified Water?
Take some time this week to note your water intake.  Be sure to drink half your weight (in fluid ounces) each day.  By the time you feel thirsty, you are already dehydrated!

SAD to RAD, SHINE, & Summer Memorial Day Special Offer!

Hi Health-Seeker,

Summer is here.  Not officially yet, but with temps in 90's here in Austin and Memorial Day less than a week away, its picnic and beach time in most  places.  I heard it’s even hot in Utah these days!

My son is officially home for summer, and our food bill has already doubled.  How can one kid eat so much?

He’s so excited to get whole fresh foods, readily available, that he’s making up for lost time.

And speaking of food, Eric invented a new recipe today. I was making him guacamole and he asked if I could try adding cashew/mac cheese to it.

It was delicious,

Poor kid was fat starved.  The quality of the fats at school were not what he’s used to at home, where he gets his fill of avocado, raw nut cheese, flax oil and hummus.
 
The recipe is easy, and is posted below.

Iodine is an essential mineral. It has a number of essential functions in your body, including thyroid balance. Here in the west, we are suffering from an epidemic of thyroid deficiency.


Iodine has been the subject of a great controversy. There are people who say, ‘No, don’t take extra iodine,’ and others who say, ‘Yes, you must take extra iodine.’ There’s a lot of controversy.

I attended a lecture at a conference by Dr. Jay Mead, an MD. He termed it ‘iodophobia’ – fear of iodine. There’s a lot of that going around because of some pretty poorly done studies that he says were not scientific at all…

Nutrigenomics

 

This week in our Client Assessment Tools for Holistic Practitioners program, the topic is Nutrigenomics.  This is the science of looking at the influence of genes on choosing the appropriate diet and lifestyle activities.  Contrary to popular belief regarding elective mastectomy for people who have the BRCA1  breast cancer gene, body mutilation is not required to decrease risk.  Genes come with the package at birth.  However it's environment that controls the expression of many of these genes.  Bruce Lipton, MD, author of  The Biology of Belief explains it well.

This week’s radio show covers this very topic.  In addition, here are a couple of Nutrigenomics resources to check out, especially if you deal with complex cases that don’t respond as well as expected to alterations in diet and lifestyle.

http://www.23andme.com – $99 for a very thorough assessment of SNPs, single nucleotide polymorphisms – the fancy name for smile genetic mutations

http://www.mthfr.net – lots of background on the most studied SNP, MTHFR, including videos and resources.

Eric's “Cheesy” Guacamole:


Ingredients:

1 recipe guacamole – your favorite or ours, below:

  • 2 large  avocados
  • Juice of 2 lemons
  • ¼ teaspoon salt, or to taste
  • Pinch cumin

PLUS: 3 heaping tablespoons cashew/mac cheese (recipe for a big batch follows):

  • 1/2 cup cashews
  • 1/2 cup macadamia nuts
  • 1 cup water
  • salt to taste
  • juice of 2 lemons

Directions:

1.   Make guacamole by putting everything in a bowl and mashing with a potato masher or fork until desired consistency

2.   Make nut cheese by blending all ingredients until smooth

3.   Stir 3 tablespoons nut cheese (or more to taste) into guacamole and enjoy!
