I guess it’s a good thing our juiciest fruits are harvested in the summer months. We can have fun eating them outdoors and then just hose ourselves off! I recently wrote about the pleasure of pluots, but is there better icon for summer than watermelon?
More of the antioxidant lycopene is found in watermelon than any other fruit or veggie, and it is a great source for vitamin A, vitamin C, vitamin B6 and potassium. But there is more – it also helps us maintain proper electrolyte and acid-base balance.
All melons should be eaten alone, according to most food combining principles. My favorite way to enjoy this seasonal delight is the meat and rind of an organic watermelon separately, than drink the green juice before the pink. Ahhhhh… yummy and hydrating, too!
