Asparagus Curry Noodle Soup

With the arrival of mid-April, there is no better way to savor the bounty of flowers and refreshing spring showers than with this recipe for asparagus curry noodle soup. The creamy richness of coconut curry pairs beautifully with the freshness of fresh asparagus in this springtime recipe. This is a great soup to make for a nice spring lunch, or if you are looking to follow a raw vegan, vegan, dairy-free, or ketogenic diet.

Ingredients
  

  • 5 stalks asparagus raw or steamed
  • 1 package konjac kelp, or zucchini noodles (raw or steamed)
  • 1 tablespoon lemongrass dried (*or 2-3 Drops of high quality Lemongrass essential oil)
  • 2 cups water or broth from steaming asparagus
  • 2 tablespoons coconut butter
  • 1/4 teaspoon kelp flakes
  • 1/2 teaspoon sea salt whole and unrefined
  • 1/2 teaspoon curry paste

Instructions
 

  • Chop the asparagus stalks into 1-2” pieces.
  • If steaming, steam the asparagus and noodles for 5 minutes, reserving the steam liquid for broth.
  • Put the noodles and asparagus into a serving bowl.
  • Put the lemongrass and water into a blender and blend well.
  • *If using essential oil,  combine the liquid and essential oil and skip step 5.
  • Strain the lemongrass out through a fine mesh strainer or nut milk bag.
  • Pour the liquid back into the blender and add the coconut butter, kelp flakes, sea salt, and curry paste, everything except the asparagus and noodles.
  • Blend until Smooth.
  • Pour over the bowl of asparagus and noodles and enjoy!

Notes

*Garnish with a dollop of coconut cream, sliced green onion, shredded Thai basil, or fresh parsley.
