Ingredients
  

  • 1 ¼ cup water or non-dairy milk
  • 1 teaspoon sunflower butter almond butter, or another nut butter
  • 1 tbsp heaping tablespoon cacao
  • 1 teaspoon vanilla
  • ½ teaspoon cinnamon
  • ¼ cup cashews soaked and drained
  • 1 Monk fruit stevia, or lucuma to taste
  • 2 tablespoons chia seeds per serving
  • Optional: cacao nibs for topping
  • Optional: cherries for topping

Instructions
 

  • Blend the water or non-dairy milk, nut or seed butter, cacao, vanilla, cinnamon, and soaked cashews until smooth and creamy.
  • Divide the mixture into serving dishes and stir in your preferred sweetener.
  • Add chia seeds and mix well.
  • Allow the pudding to rest for about 15 minutes or refrigerate overnight until the chia seeds absorb the liquid and create a thick pudding texture.
  • Finish with cacao nibs, cherries, or your favorite toppings before serving.
