This vibrant Cranberry-Yogurt Parfait combines tangy cranberries, creamy coconut yogurt, and a hint of orange for a festive, low-glycemic treat that's as nourishing as it is delicious.
Vanilla dairy free yogurt like Vanilla Cocoyoor homemade coconut or cashew yogurt
*vanilla if you aren’t using vanilla yogurt
Instructions
Add the fresh cranberries to a food processor and pulse until they are broken down to a smooth, slightly chunky consistency.
Add orange essential oil and pure monk fruit liquid to the cranberries in the food processor. Pulse again until everything is well combined.
In a glass bowl or wine glass, start by spooning in a layer of Vanilla Cocoyo (or your favorite coconut or cashew yogurt with some vanilla stirred in).
Add a layer of the processed cranberry mixture on top of the yogurt layer.
Continue alternating layers of yogurt and cranberry mixture until the container is full, finishing with a layer of yogurt on top.
Serve immediately, or refrigerate for a chilled, refreshing treat. (Store any leftovers in an air tight container in the fridge).
