Ingredients
  

  • 2 pcs cucumbers, diced
  • 1 1/2 cups cooked chickpeas, drained and rinsed
  • ¼ cup diced red onion
  • 1 pc tomato, diced
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • Sea salt and pepper, to taste
  • Handful fresh mint leaves, rough chopped
  • Handful fresh cilantro, rough chopped
  • 1 tbsp olive oil or extra lemon juice for added moisture Optional

Instructions
 

  • Place diced cucumber in a large bowl.
  • Add chickpeas, red onion, tomato, lemon juice, and garlic.
  • Season with sea salt and pepper.
  • Gently stir in mint and cilantro.
  • Serve immediately, or refrigerate for deeper flavor.
