1 head kale stems removed and chopped with a sharp knife 1 head collard greens stems removed and chopped 4 cups baby spinach washed and drained 2 lemons juiced 1 tablespoon olive oil optional 3 cloves garlic minced 1 teaspoon salt
Rinse and chop all of the greens with a sharp knife. Add the chopped greens to a steamer basket and cover.
Steam the greens over medium low heat until they wilt – about 7 minutes. Once wilted, add the bright green leafy veggies to a serving bowl.
In a small bowl, press the garlic into the lemon juice and a little oil, then stir or whisk well.
Add salt to taste.
Pour the dressing over the greens and toss well. They are ready to serve immediately.
