  • small wisking bowl

Ingredients
  

  • 1 celery root peeled, cut into pieces
  • 1/2 head cabbage cut into pieces
  • 2 large carrots
  • 1 fennel bulb
  • 1 bunch scallions green parts only
  • 1 can artichoke hearts
  • Handful arugula if desired
  • 1/2 tomato cut into pieces

Dressing:

  • 2 tablespoons raw organic tahini
  • 2 tablespoons unrefined low temperature sesame oil
  • 2 tablespoons lemon juice
  • 1 inch ginger
  • 1/2 cup water
  • 1/4 teaspoon salt
  • Approximately 1/2 inch jalapeno if desired

Instructions
 

  • Shred celery root, cabbage, carrot, and fennel in a food processor.
  • Add shredded vegetables to a large mixing bowl.
  • Chop scallion greens and artichoke hearts; add to the bowl.
  • Place dressing ingredients in a blender and blend until smooth.
  • Pour dressing over vegetables and toss well.
  • Add tomato and arugula (if using) and toss again.
