- 1 celery root peeled, cut into pieces
- 1/2 head cabbage cut into pieces
- 2 large carrots
- 1 fennel bulb
- 1 bunch scallions green parts only
- 1 can artichoke hearts
- Handful arugula if desired
- 1/2 tomato cut into pieces
Dressing:
- 2 tablespoons raw organic tahini
- 2 tablespoons unrefined low temperature sesame oil
- 2 tablespoons lemon juice
- 1 inch ginger
- 1/2 cup water
- 1/4 teaspoon salt
- Approximately 1/2 inch jalapeno if desired
Shred celery root, cabbage, carrot, and fennel in a food processor.
Add shredded vegetables to a large mixing bowl.
Chop scallion greens and artichoke hearts; add to the bowl.
Place dressing ingredients in a blender and blend until smooth.
Pour dressing over vegetables and toss well.
Add tomato and arugula (if using) and toss again.
