1 head cauliflower cut into small pieces 1 head of broccoli cut into small pieces 1/2 cup artichoke hearts packed in water or frozen and thawed 1/2 cup Kalamata olives 1 carrot diced 1 red bell pepper diced 1/2 cup tomatoes diced 2-3 cloves garlic minced 2 pinches fresh thyme chopped 1/4 cup lime juice 2 tablespoons apple cider vinegar 1- 1 1/2 teaspoons salt 1 teaspoon pepper 1/2 cup olive oil
Place cauliflower, broccoli, artichoke hearts, Kalamata olives, carrot, red bell pepper, tomatoes, garlic, thyme, and basil in a large bowl.
Put the lime juice, apple cider vinegar, salt, pepper, and olive oil in jar.
Shake.
Pour over vegetables and toss.
Garnish with basil chiffonade, if desired.
