Rainbow Vegan Nori Rolls (Raw Vegan Sushi)

Equipment

  • bamboo sushi mat
  • cutting board
  • Sharp Knife

Ingredients
  

  • 6 nori sheets organic, toasted or raw
  • ½ cup Nut or seed pâté sunflower seed, almond, cashew, etc. OR mashed avocado
  • Umeboshi paste Optional: for miso, pickled ginger for added flavor

Toppings choose any combo:

  • ½ pc Cucumber julienned
  • ½ pc Carrot shredded or thinly sliced
  • ½ pc Celery thinly sliced
  • ½ pc Field greens or romaine leaves
  • ½ pc Sprouts broccoli, alfalfa, sunflower, etc.
  • ½ pc Fresh herbs like cilantro mint, or basil

Instructions
 

  • Place a nori sheet shiny side down on a bamboo mat or cutting board. Add a layer of pate or avocado, spreading edge-to-edge on three sides, leaving a 1–2 inch space at the top. Layer with greens, veggies, and any flavor enhancers.
  • Roll tightly using your fingers or sushi mat, sealing the top edge with a bit of water. Slice with a sharp, wet knife into bite-sized rounds.
