- 1 cup macadamia nuts or cashews
- 1/2 cup water
- ½ teaspoon monk fruit extract or 1 teaspoon date paste, yacon, or agave if tolerated
- 1 cup strawberries fresh & sliced
- 1 pc mint leaves fresh for garnish
Blend nuts, water, and sweetener until smooth and creamy.
Spoon a layer of cream into the bottom of a parfait cup.
Add a layer of sliced strawberries.
Repeat layers until the cup is full.
Garnish with fresh mint and enjoy!
