Caldwell’s Veggie Starter,
or ¼ cup brine from previous ferment
Instructions
Prepare a brine by dissolving salt in water, then add starter or brine from a previous ferment.
Slice ginger thinly and layer in the jar with one slice of beet for color.
Cover with brine, press down to submerge, and leave at room temperature for 5–10 days, checking daily starting at day five.
Refrigerate when desired texture and flavor are reached. Ensure ginger stays fully submerged.
