Equipment

  • 1 Jar

  • 1 blender optional

Ingredients
  

  • 1 ¾ cup thinly sliced ginger
  • 1 slice red beet (or beet powder for color)
  • 2 tbsp salt
  • 1 liter (1 quart) water
  • ¼ tsp Caldwell’s Veggie Starter, or ¼ cup brine from previous ferment

Instructions
 

  • Prepare a brine by dissolving salt in water, then add starter or brine from a previous ferment.
  • Slice ginger thinly and layer in the jar with one slice of beet for color.
  • Cover with brine, press down to submerge, and leave at room temperature for 5–10 days, checking daily starting at day five.
  • Refrigerate when desired texture and flavor are reached. Ensure ginger stays fully submerged.
