Ingredients
  

Ingredients for the Cake:

  • 1/2 cup macadamia nuts soaked
  • 1/2 cup cashews
  • 1 cup shredded dried coconut
  • 1 tablespoon coconut butter or coconut cream
  • 1 dash sea salt
  • 1 tsp vanilla
  • 1/8 tsp Luo Han or stevia
  • 1/4 cup chia gel

Ingredients for the Frosting

  • 4 tablespoons coconut butter
  • 1 tablespoon cashew butter optional
  • 1/4 cup unsweetened shredded dried, coconut flakes plus more for decoration
  • Vanilla stevia or Luo han taste
  • Vanilla
  • 1/2 cup water

*Customize by adding fresh lemon juice or grated citrus peel. You can also decorate with coconut flakes and/or dried citrus peels.

Instructions
 

Directions for the Cake:

  • Process all of the ingredients in the food processor until the mixture is a little coarse and holds together.
  • Place the mixture on a cake plate and form into the desired shape or put it into a spring-form pan lined with waxed paper and spread the batter evenly.
  • Place in the fridge until ready to assemble.

Directions for the Frosting:

  • Combine all of the ingredients except the shredded coconut in a blender at high speed until your desired consistency.
  • Stir in the unsweetened shredded coconut flakes.
  • Spread the frosting on the cake. If making a layer cake, spread 1/3 of the frosting on one cake layer, top with the second cake layer, and spread the frosting around and on top of the combined cake layers. You can press shredded coconut on the sides and sprinkle some on top.
  • Store leftover cake in a sealed container in the fridge.
