Vegan Mint Chocolate Chia Porridge

Ingredients
  

  • 1/2 cup chia seeds
  • 2 1/2 cups water or dairy free milk coconut milk will make it really rich
  • 1 scoop protein powder (raw) e.g. Sunwarrior Raw Vegan Protein, hemp protein, or pea protein
  • 1 pinch sea salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons carob powder or cacao powder or cocoa powder
  • 3 drops mint essential oil or peppermint extract
  • additional sweetener if needed: stevia monk fruit, blended blueberries

Instructions
 

  • Blend or whisk everything except the chia seeds until it is a smooth mixture.
  • Spread the chia seeds into a bowl and pour the protein powder mixture over it. Stir well.
  • Soak the chia seeds in the mixture in the fridge for several hours or overnight.
  • Once the chia seeds have absorbed all the liquid and expanded, it will be thick and gelatinous.
  • Taste and adjust the flavorings. Add stevia or monk fruit if needed for sweetness.

Notes

*For a dessert option, top this mint chocolate blend with dark chocolate chips or cacao nibs, chopped nuts or seeds, coconut cream, fresh mint leaves, and some shredded coconut
