Zucchini and Coconut Gluten-Free Crepes

  • 1 blender High Speed
  • 1 dehydrator

Ingredients
  

  • 2 zucchini cut into pieces
  • 1 bag approximately 3-1/2 cups coconut meat
  • 2 teaspoons lemon juice
  • 1/2 teaspoon salt

Instructions
 

  • Blend zucchini and coconut meat in Vitamix.
  • Add lemon juice and salt and blend.
  • Add other flavorings if desired.
  • Pour in a circle on Teflex sheet and use spoon to spread.
  • Dehydrate, turning during dehydration.
