1 head cauliflower chopped 1 cup coconut butter or 13–14 oz can of coconut cream OR flesh of 1 coconut—start with ½ and adjust to taste handful red cabbage for color and depth pinch Himalayan pink salt to taste
Steam the cauliflower (and cabbage, if using) until tender but not mushy and reserve the steaming liquid.
In a high-speed blender, combine cauliflower, coconut, and a bit of steaming water. Blend until creamy.
Adjust thickness with steaming liquid as needed.
Add salt to taste, blend again, and enjoy over your favorite noodles or veggies.
