Creamy Cauliflower Alfredo

This creamy, dairy-free Alfredo sauce blends steamed cauliflower and rich coconut into a silky, hormone-friendly topping you can use over noodles, veggies, or hearty bowls.

Ingredients
  

  • 1 head cauliflower chopped
  • 1 cup coconut butter or 13–14 oz can of coconut cream OR flesh of 1 coconut—start with ½ and adjust to taste
  • handful red cabbage for color and depth
  • pinch Himalayan pink salt to taste

Instructions
 

  • Steam the cauliflower (and cabbage, if using) until tender but not mushy and reserve the steaming liquid.
  • In a high-speed blender, combine cauliflower, coconut, and a bit of steaming water. Blend until creamy.
  • Adjust thickness with steaming liquid as needed.
  • Add salt to taste, blend again, and enjoy over your favorite noodles or veggies.
