Equipment
- steamer
- High Speed Blender or Vitamix
- Measuring cups
Ingredients
- 1 head cauliflower chopped
- 1 cup coconut butter or 13–14 oz can of coconut cream OR flesh of 1 coconut—start with ½ and adjust to taste
- handful red cabbage for color and depth
- pinch Himalayan pink salt to taste
Instructions
- Steam the cauliflower (and cabbage, if using) until tender but not mushy and reserve the steaming liquid.
- In a high-speed blender, combine cauliflower, coconut, and a bit of steaming water. Blend until creamy.
- Adjust thickness with steaming liquid as needed.
- Add salt to taste, blend again, and enjoy over your favorite noodles or veggies.
