  • 1 Vegetable Peeler or mandoline
  • 1 knife

Ingredients
  

For the Sunflower Cheese:

  • 1 cup sunflower seeds
  • 1 pc lemon juiced
  • 1 tbsp ume vinegar or 1/2 teaspoon salt
  • ½ cup water

For the Rolls:

  • ¼ recipe recipe of Sunflower Cheese (or Nutty Cream Cheese)
  • 1/8 purple cabbage shredded
  • 1 pc English cucumber thinly sliced lengthwise
  • 1 pc zucchini cut into matchsticks
  • 1 pc carrot cut into matchsticks
  • handful broccoli sprouts
  • coconut aminos for dipping

Instructions
 

  • Blend sunflower cheese ingredients until smooth.
  • Spread sunflower cheese onto cucumber slices.
  • Add veggies and sprouts about 1 inch from the edge.
  • Roll tightly and secure if needed with a toothpick.
  • Serve with coconut aminos for dipping.
