When I first started digging into the connection between blood sugar, hormones, and the food I was putting on my plate, one thing stood out, most “healthy” snacks were either flavorless, full of chemical junk, or both. My mom’s health collapse taught me the price of following conventional advice, and I’ve made it my mission to help people eat in a way that actually supports the body without sacrificing joy. 

That’s what I love about these cucumber rolls. They look fancy. They taste amazing. And they do your blood sugar and hormones a huge favor. These are great for lunch and served as appetizers, and the reactions are always the same: “These are delicious!” Yes, and they’re full of nutrients.

This whole food plant based recipe starts with sunflower seed cheese. It’s a creamy, dairy-free base that mimics a soft cheese texture without the hormone-disrupting effects of dairy.   • 1 Vegetable Peeler or mandoline
  • 1 knife

Ingredients
  

For the Sunflower Cheese:

  • 1 cup sunflower seeds
  • 1 pc lemon juiced
  • 1 tbsp ume vinegar or 1/2 teaspoon salt
  • ½ cup water

For the Rolls:

  • ¼ recipe recipe of Sunflower Cheese (or Nutty Cream Cheese)
  • 1/8 purple cabbage shredded
  • 1 pc English cucumber thinly sliced lengthwise
  • 1 pc zucchini cut into matchsticks
  • 1 pc carrot cut into matchsticks
  • handful broccoli sprouts
  • coconut aminos for dipping

Instructions
 

  • Blend sunflower cheese ingredients until smooth.
  • Spread sunflower cheese onto cucumber slices.
  • Add veggies and sprouts about 1 inch from the edge.
  • Roll tightly and secure if needed with a toothpick.
  • Serve with coconut aminos for dipping.
