Recipe: Pumpkin Seed Chocolate Milk (gluten free, low glycemic, and delicious)

This yummy recipe is quick and easy to make and low glycemic. It makes a good alternative to nutmilk if you like something with a little less fat. This milk can nourish you with zinc & help balance your blood sugar. The carob works well as a tasty alternative to cocoa If you want to avoid caffeine or cocoa. Enjoy it on special occasions, holidays, or any time!

Pumpkin Seed “Chocolate” Milk:

Ingredients:
1 cup pumpkin seeds soaked 4 hours or overnightdoctorritamarie-daf9f211-e377-4ee4-ad91-57e9acbd7c94-v2
3 – 4 cups water
1/4 cup carob powder
2 drops mint essential oil (optional)
stevia to taste

Directions:
1. Place all ingredients in blender and process until smooth and creamy.
2. If desired, you may strain mixture through cheesecloth or a nut milk muslin bag and save the pulp for cracker or cookie recipes
