Back when I was healing my blood sugar rollercoaster, rebalancing my hormones, and trying to claw my way back from years of fatigue, I assumed chocolate was part of the problem, not the solution.

But that was before I learned how to use food as medicine.

Once I understood ingredients like cacao, burdock, and cordyceps and how they could actually support detox, stabilize energy, and calm the nervous system, I stopped looking at dessert as something to restrict. I started creating indulgent  dishes that work for you, not against you. 

This vegan, keto Chocolate Detox Pudding is one of those recipes. It tastes rich, creamy, and decadent, but every bite is helping your liver, hormones, and gut do what they were designed to do: heal.

You can enjoy chocolate while supporting your blood sugar, brain, and detox pathways. You just have to know how to blend the right ingredients.

This dairy free chocolate pudding is  loaded with functional ingredients that support blood sugar balance, hormone detoxification, and the adrenals. Almond and coconut butters provide healthy fats, magnesium, and fiber to stabilize glucose and reduce cravings. MCT oil fuels ketone production for brain and hormone support. Cordyceps boosts cellular energy and stress resilience. Cacao adds mood-boosting polyphenols and gut-nourishing flavonoids, while burdock and artichoke leaf powders aid in liver detox and estrogen clearance. 

Almond Butter

Almond butter is rich in magnesium, vitamin E, plant-based protein, and monounsaturated fats. Magnesium is a cofactor in insulin receptor activity and glucose transport which helps maintain glycemic control and reduces the risk of insulin resistance. 

Vitamin E is a powerful antioxidant that protects ovarian, thyroid, and pancreatic tissues from oxidative stress. Almonds also contain riboflavin and manganese, nutrients required for mitochondrial energy production and adrenal resilience.

From a metabolic standpoint, almond butter slows carbohydrate absorption due to its high fat and fiber content, stabilizing postprandial glucose and insulin spikes. This supports steady energy and reduces HPA-axis activation linked to blood sugar crashes. 

Almond intake has also been associated with improved leptin and adiponectin levels, which enhance insulin sensitivity and fat metabolism. 

Almonds also feed beneficial gut bacteria, supporting SCFA production (especially butyrate), which contributes to intestinal barrier function and the healthy metabolism of estrogen through microbial beta-glucuronidase activity.

Coconut Butter

Coconut butter contains both MCT-rich oil and coconut fiber. The primary MCT, lauric acid, is rapidly converted into ketones which are an efficient energy source for brain, heart, and endocrine tissues. Ketones have been shown to improve mitochondrial function, reduce oxidative stress, and enhance signaling in the hypothalamic-pituitary axis. Research shows MCT oil can improve insulin sensitivity, reduce abdominal fat, and stabilize blood sugar.

From a hormonal standpoint, MCTs enhance cellular energy availability. MCTs also positively affect the gut microbiome by reducing yeast and pathogenic overgrowth while nourishing key commensal strains. Magnesium supports insulin sensitivity and adrenal function, while theobromine acts as a gentle stimulant that increases mental alertness without taxing the HPA axis like caffeine.

  • 1 heaping teaspoon almond butter
  • 1 tablespoon coconut butter
  •  Pinch MCT oil
  • 1/8 teaspoon cordyceps
  • 1/2 teaspoon cacao powder
  • Pinch burdock powder
  • Pinch artichoke leaf powder

Instructions
 

  • Place almond butter and coconut butter in a small bowl and stir until creamy.
  • Add MCT oil and mix again. Sprinkle in the cordyceps, cacao, burdock, and artichoke powders. Stir until fully combined.
