This fabulous summer treat is a great way to beat the heat, and it is also packed with nutritious ingredients that support the heart, balance hormones, and help with blood sugar.  It’s the ultimate guilt free, dairy free, gluten free dessert.

What Is Chocolate Berry Coconut Ice Cream Made Of?

Ice cream was always my favorite food, and I would feel awful afterwards. So now, I make a dairy free ice cream that is naturally gluten free and that loves me back!

This vegan keto ice cream recipe is a blend of simple ingredients that bring a fun twist to your healthy routine. 

First up, we’ve got zucchini – yes, you read that right! Frozen zucchini adds a creamy texture without the carbs, and it has very little flavor allowing you to add the flavors you want. It is a sneaky way to keep things light and healthy. 

Next, there’s coconut, which brings in that rich, tropical, coconut flavor and adds a dose of healthy fats to keep you satisfied. It also adds a touch of sweetness without added sugar.

Then we’ve got a handful of frozen berries, bursting with natural sweetness and a punch of flavor. Use mixed berries or whichever berries you prefer. These little gems add a lovely color and a bit of tartness to balance the richness. For sweetness without the sugar rush, a few drops of vanilla stevia do the trick, giving you that classic vanilla taste. If you are making your ice cream in a blender, you’ll also want a little coconut milk to help with blending.

Finally, a tablespoon of cacao brings in that deep, dark chocolate flavor we all crave, making this vegan keto ice cream truly indulgent.

There is no need to use an ice cream maker or have to wait for it to set in the freezer! It's ready to eat right away. You’ve got a delicious, refreshing dairy free treat that's perfect for summer!

How Do You Make Chocolate Berry Coconut Ice Cream

Making this dairy free ice cream is a fun activity for a sunny day. You can make it two different ways. 

Using a juicer creates a soft serve consistency. Just run the frozen zucchini through it with a blank plate, followed by the coconut meat and berries. Alternate the coconut meat and berries to get a well-mixed consistency. Add vanilla stevia and cacao to the bowl and stir until well blended. 

For the blender method, a high speed blender would be best to get the creamiest results. Starting with a little coconut milk, add everything to the blender and blend until smooth.  You may need to add more coconut milk, coconut cream, an alternative milk, or water to get it good and creamy.

Feel free to customize with your favorite flavors and top it off with a dollup of coconut cream! Yum!

You can customize this vegan keto ice cream to suit your taste and dietary preferences.

Use a different fruit: Swap out the berries for other low-carb fruits or even a mix of your favorites. Each fruit brings a unique flavor and a pop of color to your ice cream. (Just keep a eye on your blood sugar if you use a tropical fruit).

Add some nut butter: Add a tablespoon of almond butter, sunflower butter, or any nut or seed butter you love to give your low carb ice cream a creamy, nutty twist. This addition also boosts the protein content and adds a delightful richness.

Play with spices and extracts: Experiment with different spices like cinnamon or nutmeg for a warm, comforting flavor. You can also add vanilla extract or try almond peppermint extract for a refreshing change.

Stir in some chocolate chips or cocoa nibs: Stir in some stevia-sweetened chocolate chips or cacao nibs for a bit of crunch and extra chocolatey goodness.

Add some omega-3s: Boost the nutritional value by adding a teaspoon of these superfoods like chia seeds, flaxseeds, or spirulina. These additions can enhance the health benefits without compromising the taste.

Use a different sweetener: If vanilla stevia isn’t your favorite, try other keto-friendly sweeteners like erythritol or monk fruit. Adjust the amount to suit your preference.

  • Juicer (either of the two)
  • High Speed Blender (either of the two)

Ingredients
  

  • ½ zucchini (small ) chopped and frozen
  • ½ Cup Coconut frozen
  • ½ Cup Berries frozen
  • Vanilla stevia Few drops
  • 1 tablespoon cacao powder
  • 1/4 cup coconut milk coconut cream, or another dairy free milk, only needed for blender method

Instructions
 

Directions For The Juicer(such as Champion, GreenStar, Omega):

  • Place the frozen zucchini in a juicer with a blank plate.
  • After the zucchini runs through, add a piece of frozen coconut and run it through the juicer.
  • Then run the frozen berries through, using another piece of frozen coconut to help push the berries along.
  • Run another piece of frozen coconut through the juicer.
  • Add the vanilla stevia and the cacao to the bowl and stir well. Use alternate flavors if you desire.

Directions for the Blender:

  • In a blender, add the coconut milk first to help the blades.
  • Add your remaining ingredients, zucchini, coconut, berries, stevia, and cacao.
  • Blend just until smooth. Taste and adjust your flavorings.
  • Enjoy!
