Cilantro Coconut Lime Green Soup for Sugar Control

When restoring thyroid health, it is important to consume foods that are high in antioxidants and anti-inflammatories. This beautiful Cilantro Coconut Lime Green Soup combines loads of minerals, antioxidants, and anti-inflammatories with Thai-inspired flavors.

Cilantro and spinach are leafy greens that are packed with minerals.  Not only is cilantro high in minerals, but it has been found to be high in nutrients that are wonderful for cleansing while also being high in antioxidants and anti-inflammatories. Spinach is very high in vitamin A which is frequently low in people with thyroid conditions. Vitamin A is essential for thyroid hormone synthesis and metabolism. Combining spinach with avocado enhances the absorption of that vitamin A.

 Ginger does not always get the credit it deserves, but it is packed with nutrients that are anti-inflammatory.  Ginger contains compounds that inhibit the production of inflammatory cytokines, reduce oxidative stress, and modulate immune cell function. One animal study even showed that ginger extract reduced thyroid inflammation and oxidative stress markers while a study in humans showed that ginger extract inhibited thyroid cancer growth.  While these studies suggest that ginger may have therapeutic benefits for thyroid inflammation, more research is needed. Meanwhile, adding ginger to your diet is a simple and delicious way to incorporate other functional foods into your meals. Finding ways to add a food-grade lemongrass essential oil to your recipes is a great way to add an additional anti-inflammatory touch with a fabulous taste, as well.

 Capsaicin is another nutrient that aids in inflammation.  This is a chemical that is found in peppers like the jalapeno and red bell pepper found in this recipe. In general, the hotter the pepper, the higher the content of capsaicin.  These peppers are also very high in vitamin A, vitamin C, and potassium which are also important for thyroid health.  Avocados are another anti-inflammatory food that adds even more phytonutrients, wonderful forms of fiber for gastrointestinal health, and antioxidants to aid in oxidative stress.

Ingredients
  

  • 2 – 3 cups large handfuls of spinach
  • 1 cup large handful cilantro
  • 1/4 cup Coconut Cream concentrate or young coconut meat
  • 2 limes juiced
  • 1/2 avocado
  • 1/2 red pepper
  • 1/8 – 1/2 jalapen?o or other hot pepper
  • 2 cloves garlic
  • 1 pinch of sea salt to taste
  • 1/2- inch piece of ginger or to taste (optional)
  • 1 – 2 cups water or juice of fresh young coconut
  • 5 drops lemongrass essential oil optional

Instructions
 

  • Put all ingredients in a blender and blend until smooth and creamy.
  • Adjust seasonings and liquid to taste and increase/decrease water to desired consistency

    I really like this. Finally had all the ingredients except a jalapeño and substituted frozen Hatch green chile and added about 1/2 tsp of my homemade chili powder. I dehydrate chilis from the garden and then grind them in my nut grinder to make a nice powder. Next time, I think I will increase the coconut cream to 1/3 cup as I love the coconut taste. Perfect green drink with the tart flavor I love. Thanks for the recipe!
