Pancakes evoke a sense of comfort and nostalgia, usually with fond memories of weekend breakfasts, family gatherings, or special occasions. This particular vegan pancake recipe offers a canvas for a wide range of flavors and toppings making them enjoyable any time of day.

Their soft and fluffy texture makes these delicious pancakes a universally beloved treat. Additionally, the ritual of making pancakes, whether as a solo endeavor or a shared activity with loved ones, adds to the enjoyment. 

Instead of a meal of just pancakes covered in syrup which are inflammatory and not blood sugar friendly, these should be enjoyed as part of a meal with your green smoothie or chia pudding with some low-glycemic, fresh fruit, or even with some roasted vegetables and a sauce. 

Whatever time you decide to have your breakfast, I recommend that you “break-fast” with something high in plant-based proteins and healthy fats with greens.  Breakfast on the standard American diet, S.A.D., is usually full of fat, sugar, and unhealthy proteins like donuts, sausage biscuits, cold cereals and toast, and even pancakes with lots of syrup and chocolate chips.

What Are Vegan, Keto, Gluten Free Pancakes Made of?

These vegan pancakes are simple and delicious. You can whisk this pancake batter by hand like traditional pancakes or make it even simpler by throwing everything into your blender.

Coconut flour adds a sweet flavor to these pancakes, but you can really mix and match this ingredient and even swap out some of the flour for your favorite protein powder. Be careful when choosing gluten free flour, because they are usually made with rice flour, potato flour, and tapioca flour which all raise blood sugar. It is better to use flours higher in protein like coconut, almond, or even ground rolled oats if oats do not spike your blood sugar.

Ground flax seeds contribute to the richness of this vegan pancake recipe, while any non-dairy milk can provide the ideal creamy base. I prefer coconut milk, but almond milk and even oat milk can be tolerated by some people. Vanilla stevia, and a pinch of salt enhance the overall flavor profile.  You can also use stevia or Lou Han and vanilla extract.

To make these higher in protein, replace half of the flour with your favorite protein powder. You can even add your favorite greens powder or beet powder to give these a fun color with more nutrients.

You can also customize the flavor of this pancake recipe. Add some apple cider vinegar to give it a taste similar to buttermilk pancakes. Add some lemon zest for a special touch. Stir some fresh berries into the pancake batter to make berry pancakes.

How Do You Make Vegan, Keto, Gluten Free Pancakes?

This vegan pancakes recipe is a blend that begins by combining coconut flour and freshly ground flax seeds in a medium bowl. Add a splash of non-dairy milk, forming a mixture like a traditional thick batter. Feel free to adjust the consistency with a bit more milk if needed to thin.  Flavor with vanilla stevia, delivering sweet notes, and a pinch of salt to balance the flavors. 

To make the batter even simpler just throw it all into the blender and blend until smooth.

Spread the batter into rounds onto dehydrator sheets, and let them dry for an hour, flip your tray and pull off the sheet and let dry another hour or so until they are firm on all sides.

Top them with ½ cup of fresh blueberries.  If you want something like a syrup, gently warm some frozen berries until they get nice and juicy and pour over your pancake.

You could even make blueberry pancakes by adding your clean and dry blueberries to the batter before you spread it onto the dehydrator trays.

No complicated steps here—just the joy of creating vegan pancakes that are as easy as they are scrumptious.

These refined flours can lead to a quicker rise in blood sugar levels, potentially contributing to inflammation and issues related to insulin resistance.

Flax Seeds

Flax seeds are frequently used as an egg substitute and compared to eggs, they are anti-inflammatory and lower in cholesterol. Flax seeds are rich in alpha-linolenic acid (ALA), a plant-based omega-3 fatty acid that has anti-inflammatory properties. ALA has been associated with reduced inflammation in the body, supporting cardiovascular health and mitigating chronic diseases.

Ingredients
  

  • 1/3 cup coconut flour or grainfree flour of your choice
  • 1/3 cup freshly ground flax seeds
  • 1 cup non-dairy milk
  • 5 drops vanilla stevia
  • Pinch salt

Instructions
 

  • Place coconut flour, flax seeds, and milk in a bowl.
  • Stir. Add more milk if needed.
  • Add vanilla stevia and salt and stir.
  • Form into the shape of pancakes and dehydrate on a dehydrator sheet until dry on all sides

Notes

*To cook on the stovetop: add ½ teaspoon baking soda and stir, then heat coconut oil or in a pan, put 1?4 cup pancake mix in the coconut oil, cook until bubbles cover the surface, flip to the other side and cook until cooked through.
**Double this recipe and freeze leftover pancakes for another day. You can easily warm them up in the dehydrator.
