How Do You Make This Dairy-Free Ice Cream?

This is one of those recipes that feels way too easy for how good it turns out. Just toss everything into your blender, coconut yogurt, blueberries, lemon juice, basil, and monk fruit. (You can leave the zest out and throw it in at the last minute, if you want the yellow specks). 

Blend until velvety smooth, then pour into your chosen freezing vessel. If you’ve got a Ninja Creami, great! Freeze it in the container, then spin on Gelato mode until creamy (you might need two or three cycles for that luscious scoopable texture). 

No Creami? No problem. Pour into ice cube trays, freeze, and then blend again when you're ready for that spoonful of magic.

How Do You Customize This Recipe?

    • Want a little extra protein? Add some hemp seeds,  add a scoop of your favorite plant-based protein powder, or swirl in a ribbon of tahini before freezing.

    Ingredients
      

    • 1 cup plain coconut yogurt homemade is best
    • 1/2 cup fresh or frozen blueberries
    • 2 lemons juice and zest
    • 1 teaspoon vanilla extract
    • ¼ teaspoon Monk fruit extract powder
    • 1 handful fresh basil

    Instructions
     

    • Blend all ingredients until smooth.
    • Pour into your desired freezing container.
    • Freeze.
    • Blend.
    • Ninja Creami: Freeze in the Creami pint, then process using Gelato setting 2–3 times.
    • Ice Cream Maker: Follow your machine’s instructions.
