Crust Ingredients

  • Pulp from 1 cup soaked almonds (after making almond milk)
  • 2 tbsp ground flax seeds
  • dash sea salt (optional)
  • 2 tsp psyllium flakes
  • 2 tbsp  cacao powder
  • ½ tsp vanilla extract
  • Luo han, stevia, or preferred sweetener

Vanilla Cream Ingredients

  • 2 cups chopped cauliflower, steamed until soft
  • 2 tbsp  cashews
  • 1 tbsp  vanilla extract
  • dash of salt
  • Luo han, stevia, or preferred sweetener
  • ¼ cup filtered water
  • ½ tsp agar powder
  • 6 ounces berries
  • 2 tbsp Lily’s chocolate chips

Instructions
 

Crust Direction

  • Combine all ingredients in a bowl, shape into a ball, and press onto a parchment-lined baking sheet.
  • Bake at 375°F for 45 minutes, then cool completely.

Vanilla Cream Directions

  • Blend cauliflower, cashews, vanilla, salt, and sweetener until smooth.
  • Dissolve agar in water, bring to a boil, and simmer for one minute.
  • Blend the heated and dissolved agar into the cauliflower mixture.
  • Let cool slightly and spread over the crust.
  • Top with raspberries and chocolate chips.
  • Chill for at least 15 minutes before serving.
