When I first started my journey toward real health, I realized that the foods we eat can either fuel our hormones or throw them completely off. I wanted meals that are indulgent and satisfying and still support energy, blood sugar, and adrenal balance. That’s why I created this vegan, keto Whole-Food Burrito, Taco, and Nacho Board. It’s a fun, colorful, completely gluten free, dairy free, fully customizable platter that feels celebratory but is rooted in functional nutrition. 

It’s perfect for family meals, meal prep, or entertaining guests, and it proves you don’t need meat, dairy, or refined carbs to enjoy bold flavors and crave-worthy textures.

This platter brings together a mix of whole-food staples that are super easy to throw together and have ready in your kitchen.. Start with green flax wraps as your low-glycemic, fiber-rich base. Add protein-packed nut and veggie “meat”, creamy vegan queso, rainbow salsa, spicy guacamole, tangy dairy-free sour cream, and sunflower-seed-based refried “beans.” Round it out with fresh toppings like chopped olives, tomatoes, green onions, romaine for “taco shells,” and assorted crunchy vegetables to use as nacho chips. Each component is designed to maximize flavor, texture, and functional benefits while keeping the entire board plant-based,, hormone-supportive, and family friendly.

How Do You Make This Whole-Food Burrito, Taco & Nacho Board?

This is a mix-and-match masterpiece. 

Do a little meal prep. 

  1. The day before: Make your wraps, vegan nut meat, vegan queso, and refried “beans.” 
  2. On the day of serving, make your salsa and spicy guacamole (they are always best fresh). 
  3. When ready to serve, set everything on a large platter: fold or layer your wraps, fill romaine leaves for tacos, and arrange veggies for dipping.
