Crispy Zucchini Chips: A Low-Carb, Hormone-Balancing Snack for Blood Sugar Support

Crispy Zucchini Chips

I remember the days when snacks were all about instant gratification. They were something crunchy, salty, and ready to eat. I’d reach for chips or crackers, only to feel that sugar-and-carb crash an hour later, leaving me craving more. I’d have the kind of glucose spike that doesn't just zap your energy; it stresses insulin, triggers cortisol, and sends your hormones into a rollercoaster. Over time, repeated swings like that can lead to insulin resistance, weight gain, and metabolic stress.

Crispy, flavorful, and surprisingly easy to make, these zucchini chips turn a humble vegetable into a powerful snack that feeds your cells and keeps you energized. Once you try them, you’ll see how effortless it can be to snack smart without sacrificing taste or your health.

What Are Zucchini Chips Made Of?

These chips are simple but bold in flavor. Thin slices of fresh zucchini are sprinkled with the salty, herby goodness of Herbamare and the nutty crunch of everything bagel seasoning. Optional touches of paprika, cayenne, and rosemary layer in warmth and depth.

Dehydrated, the zucchini transforms into crisp chips that are satisfying to the bite, yet keep the veggie’s natural sweetness and vibrant color intact.

How Do You Make Zucchini Chips

Making these chips is so easy. Slice the zucchini paper-thin and lay them out in a single layer. Sprinkle generously with Herbamare, everything bagel seasoning, and any spices that suit your taste. The dehydrator does the rest, slowly drawing out moisture while locking in flavor. As the slices crisp, the aromas shift and intensify, teasing your senses and building anticipation. By the time they’re done, you’ll have a stack of healthy, crunchy chips.

How Do You Customize This Recipe

This snack is fully adaptable.

  • Want more heat? Sprinkle paprika, cayenne, or chili powder.
  • Craving a more herbal bite? Add rosemary, thyme, or oregano.
  • For a nutty crunch, mix in sesame or sunflower seeds.
  • Play with salt intensity using different Herbamare varieties.
  • Slice thicker for softer “chips” or paper-thin for maximum crisp.
  • Swap zucchini for another summer squash or or even cucumbers depending on what’s available
  • Sprinkle with nutritional yeast for richness

How Do These Ingredients Help With Blood Sugar, Heart Health, And Hormones

These zucchini chips are a mix of nutrients that support blood sugar, cardiovascular health, and hormone balance. Low-glycemic zucchini, mineral-rich herbs, and nutrient-dense seeds combine to slow glucose absorption, reduce inflammation, and nourish the gut microbiome. These help optimize insulin sensitivity, support thyroid and adrenal function, and provide the building blocks for hormone synthesis, making each bite a small dose of metabolic and endocrine support.

Zucchini

Zucchini has soluble fiber, especially pectin, which slows glucose absorption and moderates post-meal insulin spikes, supporting better insulin sensitivity. This  fiber feeds  beneficial gut bacteria, promoting gut-endocrine communication and healthy satiety hormone signaling.

The carotenoids, lutein and beta-carotene, help reduce oxidative stress in endocrine organs such as the pancreas and adrenal glands. Potassium and B vitamins in zucchini support adrenal and thyroid function, energy metabolism, and neurotransmitter synthesis, and its low glycemic load makes it ideal for blood sugar management.

Herbamare

Herbamare, a blend of sea salt and organically grown herbs with kelp, supplies iodine to support thyroid hormone production and maintain basal metabolic rate. Antioxidants from parsley, celery, and chives protect pancreatic beta cells, reducing oxidative damage and inflammation in adrenal tissue.

The combination of minerals and trace elements supports enzymatic reactions needed for glucose and lipid metabolism and aids detoxification pathways, which can indirectly enhance estrogen metabolism and hormone balance.

Everything Bagel Seasoning

Seeds in everything bagel seasoning, including sesame, poppy, and sunflower seeds, add magnesium, zinc, and calcium which are essential cofactors for insulin signaling, enzymatic regulation of lipid metabolism, and cardiovascular health.

The allium compounds in the garlic and onion reduce systemic inflammation and protect hormone-producing tissues. These compounds support blood sugar, improve lipid profiles, and metabolic and endocrine function.

Other Spices

Optional spices such as paprika, rosemary, and cayenne add thermogenic and anti-inflammatory phytonutrients. These compounds enhance adiponectin activity, support healthy estrogen metabolism, and promote the release of gut-derived satiety hormones like GLP-1, peptide YY, and CCK. By modulating inflammation and supporting metabolic signaling pathways, these spices help maintain balanced cortisol levels, improve insulin sensitivity, and promote overall hormone regulation.

Zucchini Chips

These zucchini chips are a go-to snack for anyone craving crunch without the blood sugar rollercoaster. They satisfy cravings, stabilize glucose, support metabolic and adrenal health, and take minutes to prep. Keep them on hand for stress-free, nutrient-dense snacking that actually helps your hormones and keeps you full longer.
