Recipe: Pomegranate Candy

Valentine's day is coming up in a couple of weeks and most people indulge in sugary candies or give them as gifts to their loved ones. What if you could quickly make heart-shaped candies that are also good and healthy for you?

Pomegranate Candy

Ingredients:

  • 1 cup finely shredded unsweetened dried coconut
  • 1 cup macadamia nuts
  • 1/2 cup pomegranate powder

Directions:

  1. Process all three ingredients in a food processor until combined into a paste.
  2. Press the paste into candy, heart-shaped molds.
  3. Freeze for 4 hours.
  4. Pop them out of the molds and enjoy.
  5. Store in an airtight container in the freezer.

  • Can these be made with fresh pomegranate and soaked raw macadamia nuts?

    • I imagine they could, Anita. You'll want to adjust your other dry ingredients to account for the moisture from the pomegranate. If you try it, come back and let us know how it works.
